Kitchen knives need to be sharpened to a keen edge while removing as little metal as possible from the blade. I use a Tormek T8 water-cooled, slow-speed grinding wheel to give an exceptionally sharp, hollow-ground bevel at any angle. This avoids overheating the blade and removes the minimum amount of metal necessary from the edge. Blade and handle polishing and any needed minor repairs to the edge and tip are included.

High end shears present a unique challenge as they often have convex bevels and hollow ground blades, and they need to have exquisitely sharp edges. I dissasemble each pair, use an ultrasonic cleaner to clean all parts, sharpen on the Hira To Flat Hone system, touch up the ride line on a 6000 grit whetstone, then lubricate and reassemble your shears leaving them as sharp as they came out of the box…sometimes sharper.

While you see videos online on how to sharpen clipper blades yourself, to do so properly you need a slightly convex hone to achieve a hollow grind, otherwise your sharpened blades will rapidly become dull. I dissassemble clipper blades, clean all components in an ultrasonic cleaner, sharpen the edge with a Nebraska CS-101 sharpening machine, demagnetize the blade, reassemble, then check and adjust the spring tension. Blades will be returned to you within factory spec and sharpness, and my clients often tell me the blades are sharper then when they were new.
